We have a neighbor who buys vegetables in the farm that is about 3 hours away by car. The get the harvest in the afternoon and arriving in the warehouse at night the workers would start cleaning the vegetables for packing. By 4 am they are ready to deliver the packed vegetables to the restaurants and groceries. In the beginning they had only 1 truck but now they have 6 trucks because customers are growing in number because they maintain the quality of their vegetables. The trick is in the travel and timing of the harvest. It should be late afternoon so the vegetables would not wither and at night the weather is cooler.
