White sugar raises blood sugar levels, however raw honey does not.
White sugar and raw honey are both carbs. Additionally, they both have glucose and fructose as their two main sugars. But whereas raw honey has roughly 85% sugars with fructose and glucose ratios that vary with each honey variety, white sugar is 100% sugars (50 percent fructose and 50 percent glucose). Honey contains 15% water, pollen, and trace nutrients. White sugar is taken into the body and blood more quickly than honey due to its differing chemical makeup. The glycemic index measures how quickly sugar is absorbed (GI). While the majority of floral varieties of raw honey have a GI that varies from 35 to 55, white sugar has a GI of 65. With all this we can't compare natural honey with white sugar.
